Ron Streicher, New Stereo Soundbook
Check this out - this book is REALLY usefull for understanding why and how stereo systems work, and what microphone systems can be used to achieve great results.

It's a fine book.
I also love a very similar one wich goes a bit beyond. It's John Eargle: Handbook of recording engineering.
Also Bruce Bartlett either Stereo or Recording on location have usefull information on stereo arrays.
