Well Dan, there is a lot to say about that! But for me the main difference lies on the kind of job you are into.
If you are only commited to record and to handle the sound the best way that you can with all the gear that you have available, then you can say (i think!) that you are a sound engineer.
On the other hand if you are commited to get into the the music, to arrange, to change and to add or remove parts from a certain music, to talk and be heard by musicians,to dialogue with musicians than you can also be a producer. Being both is pretty much a duable job, but you will have to learn not also the recording technics but the musical language from wich you will be able to comunicate with all kind of muscians. Wich somtimes is very difficult...
I hope that I made my self clear and for sure there will be some different opinions from mine, but I believe that it is a short version of the main differences between both.
