Multi-timbral Help

I have a Roland Juno D connected to my PC via MIDI cables and a MIDI Sport 2x2 interface

I downloaded two sequencing trials, the Sonar Producer Edition and the Ableton Live Trial and basically I want to just record a simple drum beat and then loop it over and over again, while in real time jamming out with my piano or any other patch (probably the most basic sequencing there is) but I can't figure out how to use the multi-timbral features

So from my understanding if you have a keyboard with multi-timbral capabilities, you can essentially make an enitre song from just that keyboard by using the 16 different channels to play 16 different instrument patches on one keyboard at the same time, but I can't figure out how to use it

Let's say I have two MIDI tracks open, one set on channel 1 and the other set on channel 2, I play piano on the first track and record it..simple. Now I use the second track and play a crappy sounding guitar and I guess I have to change the output on my keyboard to channel two and then record...simple.

But now when I play it back it only plays back one of the recordings, whichever I set the input on the keyboard too. Shouldn't there be a way to set the input to all channels, but even then, wouldn't it only play both recordings on the patch that I set the keyboard to at the time, not two different ones?

Further still, If I set the patch in the sequencer instead and get two different sounds, then am I limited to just those 128 patches in GM or is there a place to download the patches from the Juno D into my sequencer?

Sorry this post is incredibly long and confusing, I'm a newbie as you guys can tell

Ableton and Sonar both use loops. You can record your loop and have the software do this for you.
