In the "major label" sense, a producer is equivalent to the director of a film - he's calling the shots for the songs (arrangements, sounds, tone), he's also choosing the studios, the engineers, and conducting the session - the producer may or may not know much about the technical aspects of gear or handling the console, so they'll work closely with the engineer in those aspects. During a session, the producer is the captain of the ship and the engineer is first officer. In an interesting twist, the producer is generally chosen by the label, but is really an employee of the band, since the band is paying the producer out of their recoupment.
