I've done a little recording/mixing with my Digi 002 (Console, not rack) and several outboard channel strips.
But, I am an audio engineering student with not a whole lot under my belt as of yet. The most I can tell you is that the higher the bit depth and sample rate, the less "hot" you need to record. However, I am working as an Assistant Engineer / Studio Manager for another studio and he has and Pro Tools HD3 setup. Amusingly enough, he usually records at 48k because HD3 doesn't support all of his plug-ins... and he's fairly happy with the sound. I think when it comes to digital audio recordings it is usually more important to have good A/D/A conversion than anything. A higher sample rate will get you nowhere if you have a bad jitter or even worse: huge amounts of quantizization error.
But I digress:
Essentially, the high end rigs like the PT HD or APOGEE stuff tend to sound better no matter what sample rate / bit depth they have. Sometimes just because the ANALOG path is cleaner/better (or more musical)
