Hi Mike,
I have used Audition 1.5 to record up to 8 tracks at a time, so it's definitely possible. Now whether it's possible with the USB headsets, I'm not sure, it depends on how the computer sees those two mics or inputs. What you have to do is in multi-track view, right click on a track to get its properties. You'll see a drop down box for input there. Either look in the drop down, or click the button next to it to see your available input sources. Choose your first headset mic. Then go on to the next track and choose the second mic for that track. If it's that simple you're done. The sound card I use has an 8 channel breakout box with numbered inputs 1-8. So, since Audition defaults to stereo record mode, I have to select input 1 from the breakout box, and then in the input box, choose 'left only' . For input 2, I do the same thing, but choose 'right only. This puts each input on its own track. You may or may not have to do something like that with your headsets depending on how the computer 'sees' them. Play around with those input settings - I bet you'll figure it out.
